Many dishes with ancient origins, handed down from generation to generation and unique products for characteristics and quality: cheeses, meats, honey, apples and berries and the inevitable wines.

Casolèt

Traditional cheese from Val di Sole, raw cheese made with whole milk. It is a cheese also produced in ancient times, in the past the production took place exclusively in the autumn season. The shape has a diameter between 10 and 22 cm.

Apples

The apples Val di Sole have obtained the DOP (Protected Designation of Origin) recognition. Grown in the southern part of the Val di Sole, in the territory that takes the name of Val di Non, the apples of this area are called “Melinda”. In Val di Sole apples are, being one of the typical products par excellence, used in many preparations, from cider to vinegar, from mousse to delicious strudel. the apple acts by toning and firming the skin.

Berries

Speck from Val di Sole and Trentino in general, has been recognized with the marcio IGP, or protected geographical indication. This product is subjected to traditional smoking and seasoning processes, and is used in the production of pasta, bread gnocchi, dumplings and much more … speck, the region is also famous for the production of other excellent quality cured meats, such as salami, pancetta and the famous luganega.
